Week #14

This week's half share includes: parsley, sweet pepper, yellow onion, head lettuce, celery, cucumber, a slicing tomato, Aosta Valley tomatoes, and Pinto potatoes.

These gorgeous Pinto potatoes are fun to look at and they have the most delicious taste and texture. A true delicacy! Sometimes its fun to use a bit of all of the veggies in the weekly share. One of my favorite dishes when the nights begin to cool and warm, hearty soups feel just right, is Minestrone. The Aosta Valley tomatoes are the perfect cooking tomato, very much like a Roma. My favorite way to cook them is to bake them on a sheet pan in olive oil, salt, and herbs at 350 degrees for 1.5 hours. Then you can blend them into the soup or put some on top of yummy focaccia bread.
